A commercial kitchen can contain powerful gas appliances operating for long periods in a hot, busy environment. Safe operation depends on the gas installation, combustion air, extraction, make-up air, interlock controls and staff procedures working together.

Five areas that need to work together

A fault or alteration in one area can affect the safety of the whole kitchen. Changes to equipment, ventilation or layout should therefore be assessed as a system rather than in isolation.

Gas appliances and pipework

Appliances, flues, pipework and associated safety devices must be installed and maintained safely. Gas work should be completed only by an engineer who is Gas Safe registered and qualified for the relevant commercial catering work.

Extraction and make-up air

Mechanical extraction removes heat, fumes and combustion products. The kitchen also needs adequate replacement air; blocked grilles, altered canopies or poor airflow can affect safe appliance operation.

Gas interlock controls

Where the gas supply is interlocked with mechanical ventilation, the system should prevent unsafe gas use when the required airflow or fan operation is not proven.

Emergency isolation

Staff should know the location of the site emergency gas control and the business emergency procedure. Controls must remain accessible and clearly identified.

Maintenance and records

Planned maintenance, defect records and previous inspection information help duty holders demonstrate that equipment is being managed rather than left until a breakdown or failed inspection.

Before service

A short operational check before appliances are used

These are visual and operational checks only. They do not replace maintenance, gas-safety work, ventilation testing or a formal inspection.

  1. Extraction and supply-air systems start and operate normally before gas appliances are used.
  2. Air inlets, canopy filters and visible ventilation routes are not blocked or obstructed.
  3. Emergency isolation controls and access routes remain clear.
  4. Appliances show no obvious damage, unstable positioning, unusual flame behaviour or persistent ignition problems.
  5. Staff know who to contact and what to do if they smell gas, suspect carbon monoxide or identify an unsafe appliance.

Stop and escalate

Warning signs that should not be normalised

Persistent faults, unusual combustion signs and safety-control problems should be treated as defects, not routine inconveniences during a busy service.

Gas smell or suspected escape

Stop work, keep people away, avoid flames and electrical switching, turn off the supply only when it is safe to do so, and contact the appropriate emergency service or LPG supplier.

Interlock repeatedly trips or bypass is suspected

Do not defeat, bridge or reset safety controls repeatedly. Stop using affected equipment and arrange competent investigation.

Poor extraction or missing make-up air

Reduce or stop appliance use where safe operation cannot be maintained. Arrange ventilation and gas-safety assessment rather than treating excessive heat or fumes as normal.

Yellow flames, soot or combustion concerns

Stop using the affected appliance and have it examined by a suitably qualified engineer. Do not attempt burner adjustment or gas work in-house.

Suspected gas escape

For natural gas, contact the National Gas Emergency Service on 0800 111 999. For LPG, contact the LPG supplier. Do not restore the gas supply until the cause has been dealt with by a competent person.

Inspection preparation

Common issues worth identifying before the engineer arrives

Early identification allows the business to provide useful site details, arrange access and separate routine certification from any remedial or specialist work that may be needed.

  • Blocked, damaged or poorly maintained canopy filters and ventilation components.
  • Inadequate make-up air after doors, windows or air paths have been changed.
  • Interlock, fan-proving or solenoid faults that need diagnosis rather than repeated resetting.
  • Emergency controls hidden by storage, equipment or later alterations.
  • Appliances, pipework or flexible connections that need servicing, repair or replacement.
  • Missing maintenance records or uncertainty about which contractor last worked on the installation.

Commercial kitchen safety FAQs

Can kitchen staff reset a gas interlock after it trips?

A normal operator reset may be part of the manufacturer’s procedure, but repeated tripping is a fault signal. Staff should not bypass, bridge or repeatedly reset safety controls to keep appliances running. Arrange competent diagnosis.

Is extraction cleaning the same as a gas-safety inspection?

No. Cleaning, ventilation performance, gas appliance maintenance and certification are related but separate activities. One does not automatically confirm the condition or suitability of the others.

How often should commercial kitchen gas equipment be inspected?

Inspection and maintenance intervals depend on the equipment, use, manufacturer guidance and competent risk assessment. HSE guidance notes that annual inspection is generally a reasonable minimum, but some equipment or operating conditions may require more frequent attention.

Who may work on commercial catering gas equipment?

Gas work in restaurants and similar premises must be carried out by a Gas Safe registered engineer who is qualified for the specific category of commercial catering work involved.
